Dinner time~

Got home late from school yesterday. Didn’t feel like cooking so this is what we had for dinner:
Trader Giotto’s Spinach Pizza. Just ten minutes in the oven and it was crispy and delicious! Salad with my secret vinaigrette. YUM.

The pizza wasn’t enough to fill us up so we baked up another Trader Giotto’s frozen dinner, haha: Basil Pesto with Mozzarella and Tomato Flatbread. double YUM.

Dessert was Tiramisu, also from trader joes. I love that market. Though I buy my produce at GCM, all my other grocery needs are met at joe’s. Their products are always fresh and generally inexpensive compared to other supermarkets(most of the time). Plus they have delicious frozen dinners that don’t taste or look like frozen dinners! And a pizza usually costs around $3.69. My life is so much easier because of this trader joe.

My only complaint is that there aren’t too many locations near where I live. Why is it that west LA gets a trader joe’s on every block when I have to travel like five miles to get to the nearest one? And five miles through LA traffic is a long way to go for a market, don’t you think? At least they’re making one in westwood now, where I work. Can’t wait for that one to open up.

Had some grapes as well. What at good dinner we had considering the very little time and money spent on preparing it! Thank you, Trader Joe, whoever you are.

I can’t function with all this mess.

My mind is as cluttered as my desk is right now:

Not only is the ton of things on my to-do list freaking me out right now, my mind is going crazy just looking at my desk and the mess in the rest of my apartment(which I will spare you the image of …. you can guess how crazy it is just from this picture). And yes, that is a pink fro sitting on my desk. I will write an entry next week to show what use I had with that pink fro.

I will spend the rest of today getting my school and work affairs straightened out… all in preparation to spend the weekend stress and guilt free.

Amidst all the hectic, I always make time to eat.

Taco seasoned chickpeas, jalapenos, red bell peppers, cilantro, red onions, some mango, greens, and pita bread with mozarella cheese melted inside. Just a weird assembly of some stuff I had in the fridge, but came out pretty good! Would have been better if I had tomatoes and some jack or cheddar cheese though.And some mango salsa on the side. Basically just mango in pico de gallo. Whatever, it was yum.

My friends and I, in a joint effort, have turned into vegetarians. Here are some of my reasons that I’ve opted for this diet (though reasons may differ slightly among my friends):

  1. I don’t get many chances to eat throughout the day, and during those times, I end up eating meat to fill me up. So I wanted a healthier intake of food and for my palate to get more used to eating fruits and vegetables.
  2. After seeing the video on www.meat.org , I became aware of some of the torture that animals had to go through just so I could delve into a piece of meat. I’ll probably realize that it’s just a cycle of life to eat animals sooner or later, but it’s a personal choice out of the pure trauma that was caused from me watching that video, and it doesnt seem like my mind’s going to change anytime soon. These days, everytime I look at a piece of steak, a picture of a headless cow automatically floats up in my mind. Or chicken with gnarled feet and puss in their eyes.

So yeah, those are the mains reasons why I’ve changed my diet. It’s more of a dramatic reaction to the meat video and pictures than anything else I guess.

Eliminating meat. It’s been quite exciting so far. There’s a whole new genre of restaurants to discover. My fridge is filled with a more variety of food(I buy more produce now so I spend less on groceries too). I concentrate more on what I eat because I have to make sure to get the protein that I dont get by not eating meat. And who would have thought that I would make a breakfast burrito with tofu(delicious, btw)?! New recipes are always fun. And without meat, recipes are generally really easy to make.

This weekend, we had a picnic:


2 kinds of pita pockets (caprese and the other with boca meat and sauteed veggies with greens), the most amazing guacamole ever, pasta salad, and an assortment of fruit. then for dessert, we had various slices of cakes from porto’s in glendale. YUM!

We’ve also tried out some recipes at home that have turned out to be successes. Eggplant tofu, quesadillas, and some kind of pasta, I forget. My regret is that I haven’t logged any of these dinners with my camera!

So here’s my first vegetarian concoction that I chose to photograph. I don’t even know if it’s worthy of being called a concoction when it required zero skills to make. Anyway, tonight I had an early dinner so for my midnight snack(eating late, very healthy, I know) I ate feta cheese!


Did you know that in Greece traditionally served feta cheese calls for it to be baked?! A very simple dish but very delicious. I just put olive oil on the dish, laid some feta cheese on it, then sprinkled a bit of crushed red peppers and oregano on top, then baked it for 10 min, more or less. I thought it would be very salty, which it was, but the crushed red peppers offset the taste. It was still a bit too salty for me, so I dipped it in some pita bread and it was just perfect.

Speaking of salty, I noticed that a lot of vegetarian dishes at not so good restaurants tend to substitute the presence of meat in meals with complex carbs or salty stuff. Even unconsciously, I noticed that I try to fill myself up with carbs just so I wouldnt be hungry anymore. No good. I should watch out more carefully. Just as I have tried to switch my food depency from meat to more natural foods, I should lay off my dependency on such foods as well.

I can only dream….

Today, we trekked up the windy hills of Bronson Canyon to see the open house of this hand crafted English cottage. It was beautiful, as if my dream space had come to life.

A large, circular garden courtyard greeted us as we entered the property. It was filled with trees, lined with brick steps and pathways, and even had a bird bath! From the courtyard, we entered the house not through the main door, but through one of the two large leaded glass doors that invited us directly into the living room of the home. Both of the doors were opened, allowing a smooth transition from the natural feel of the outdoors to the cozy atmosphere of the indoors. The living room was wonderful! A fireplace was present as the focal point of the room, brown tiles lined the floor, and a couple of green stained glass windows stood in an art deco-like style, a style popular around the time the home was built(1920s). Pointed arches wrapped around the ceiling of the room as well. Arches in the home might sound pretentious at first, but somehow these arches eased into the pointed ceiling that shaped the house.


The dining area was beautiful, with an antique chandelier and a large window looking into the courtyard of the home. I loved the circular shape of the room. It was very inviting and naturally allowed me and my friend to face each other and converse, even without a dining table between us!

There were two rooms, and a small kitchen. The narrow staircase in the foyer led directly led to one of the rooms, the smaller of the two. It was shaped like an attic room, with small storage areas and a built in bookcase. Though it was a small space, there were windows on two walls that opened widely and looked out to the natural landscape of the hollywood hills. Lots of trees and fresh air. A perfect study room, I would think. The other room, downstairs and next to the kitchen, was large enough to serve as the official bedroom.

The kitchen was small, but practical, with all the necessities in place.

This house was made to be lived in, to be enjoyed. The size of the living room and the dining room makes up a large portion of the home(the home itself is only a little over 1,000 sq ft), with the kitchen and bedrooms being secondary spaces. It’s not that these secondary spaces are uncomfortable, because they are quite cozy, but I loved that so much of the little space available was invested into areas that serve communal purposes . Nobody is allowed to be cramped up in the kitchen or cooped up in their room. People should come out and play in the sun, gather around the fireplace, or have dinner with the whole family! The floorplan of this cottage perfectly conveyed that principle. Just imagine spending a whole Saturday lounging between the garden and the indoors, from morning till night! I would garden, work, read, sleep, drink tea, play music and have so much fun!

With windows that are present whenever possible and throughout the house, it is a beautiful cottage filled with sunlight during the day and illuminates on its own at night.

Not only do I love the decoration of the cottage, but the lifestyle that alludes to it. It’s small, and practical, yet it allows the owner to enjoy the simple pleasures of life. In this cottage, one can forget about the busy workday, the rat race in the real world, and the superficial standards that people try to set. People can just enjoy nature, hang out, and concentrate more on what’s really important in life. To me, this sense of peace and quiet to refocus is really important because I tend to forget these things quite often and act out of character.

Now to think about the home in a practical sense. I spoke about the windy roads to get to the house, but what I meant is that it’s freaking windy. Windy and narrow. One lane to be shared with both sides of traffic, with the road going up and down the hills. It would take about 5-10 minutes to just get down the mountain, only to hit the traffic on the 101(off the Hollywood exit).
Also, the square footage. Yes, the communal spaces are large and brilliant, but frankly speaking, it’s small. Of course it’s small, it’s a cottage. Not enough space for a family. But too scary for a single person, I’d say. The large windows combined with surrounding trees for strangers to hide behind, or leaves rustling really loudly on windy nights can be quite frightening (especially me, I’m a big scaredy cat). Not too practical for a working couple either. The house is old and probably needs a lot of work done, and most young people are looking for convenient and clean places to live in, traffic and maintenance wise. Older couples with lots of time and money might be better candidates for this cottage. If they don’t mind the windy roads that lead to it.

Did you know that there are flights to Mammoth mountain from LAX now? And prices start as low as $79!

No more road tripping, and no more speeding tickets on the 14, yay!!!
This is a VERY good move from Horizon Airlines.

Also, there are direct flights to Dubai from LA and SF now. Not that I’m going anytime soon, but if I ever decide to become a billionaire and take a luxurious vacation to Dubai, now I know that I can get there without a layover! nice.

As my education career comes to an end and I get ready my worklife to start in the next couple of months, I’ve been thinking a lot about how I’d like to spend my money in the future. Should I invest in a nice home and provide a comfortable setting for my future family, or should I concentrate on using my money to enjoy life and pursue my interests, like photography, snowboarding, traveling? I guess the ideal situation for me would be to have everything in moderation. To live in a comfortable yet modest home and to be able to take sporadic vacations, like to mammoth in the winter or italy in the summer. Above all, what’s most important is that I have a happy, loving family to share all of this with! Ah, I can’t wait for the future.

waking up at 530 isnt a normal thing for me. i used to do it to go to morning prayer once in a while, but i realized that its just not realistic for me to get up that early and stay energized throughout the day, especially since i usually have things to do until late at night.

but today i woke up early and made the hour long commute from LA to riverside for school. i had a 7am discussion class. my teacher looked tired, and i was tired. what i dont understand is why he just doesnt reschedule our classtime together, especially since i’m the only student enrolled in his class. yes, i sit alone in the middle of the classroom, weekly, as he presents his powerpoint slides to me and only me. and he usually only has about a couple of points to make, then ends the class only about 20 minutes into it. although i like the fact that me being the only student in this class doesnt change the structure or the quality of the lecture, i dont appreciate the fact that i go through so much trouble to get to school early for a 20min class.

so now im passing time at a coffeeshop in downtown riverside until my next class at noon. coffee depot, have you heard of it? it is located by the train tracks and the new metrolinnk station on mission. actually, this place looks like it might be an old railroad station turned coffeeshop! my friends and i used to come here when we were freshmen in college (about a century ago), so im reliving some memories as i study here this morning.

i realize that riverside has a very vibrant coffeeshop culture. some of my favorite coffeeshops like this one, coffee depot, and another called back to the grind, are located in riverside. these independently owned locations all come with mismatched furniture, local art and shelves and shelves of used books, with open mic nights or some other event going on nightly. charming, isnt it? riverside can be quite nice if you look past the drugs, crimes and prostitutes, things people usually associate this city with.
